Cucumber Guacamole - It's easy being green


I make my fresh Guacamole with avocados and cucumber. I'm not crazy about tomatoes and the addition of English cucumber to the guacamole makes the dip even more refreshing, and more green.

Here's a fast and easy recipe for my extra-green "Guac"

2 avocados, not too hard, not too soft.
1/2 English cucumber, peeled and chopped into small pieces
Juice of half a lime
1 tablespoon chopped coriander
1/4 tsp garlic paste
pinch sea salt

Halve the avocados. Remove pits. Scrape avocado flesh away from its skin. Whirr all ingredients together in a food processor or with an emersion blender. Add more lime juice or salt or a dash of Tabasco if the guacamole isn't tangy enough. Try to enjoy it fresh. Adding the pit to the leftovers will stave off the inevitable browness.

I like advocadoes and cucumbers, so that looks yummy to me. But I also like tomatoes, is it okay to add tomatoes to this recipe?

Actually, I rarely have a chance to make any guacamole because we will just peel the advocado, sprinkle some salt on it and eat it. Our favorite way to eat an advocado is to mash it up, add some salt, spread it on a flour tortilla, fold it in half, and eat.

We just bought two advocado trees in February, and are going to try to grow them again. Then we had a frost which almost killed them, but they are bouncing back. I have tried to grow them before but they always die after a year. This time I am going to keep them in their pot for a while, then plant in the ground. After that I will cross my fingers and pray like crazy that they survive. Hopefully adding two bags of Miracle Grow will help. Our soil is hard clay, and rock like. Great for grapes and calla lillies, sucky for everything else.

Good thing I am going to the store tomorrow. I need some advocadoes for some reason. Thanks for the recipe.

I absolutely agree with every word you typed except for the blending. Of course it is a question of individual taste, but mashing the flesh with a fork leaves the final product sublime, and not runny.

Avocado (with lemon or lime juice and a few modest additions) is my proof that God exists.

Hels, yes I do mash, but it's harder to mash cucumber. That's actually how I do it, but I get lumps.

Sherry, having your own avocado trees sounds wonderful.
